I need some sort of reference or example, anything that might help me set the size of my models. I don't want my environments to be too small or too big.

Use the current Dim3 as a reference. Try and make your chars the same size as the current Dim3 dude and make sure that your maps aren't so big that the dude looks like he's the size of an ant. :D
dim3 doesn't have a "size", it can be anything you want. If you make big maps and small objects, then the distances will look large, and vice-versa.
You can start with what I used in the demo, but you don't have to. teh1ghool's is a pretty good suggestion, once you get a single model adjusted, you can pretty much get the scale from that one.

No, you're given all the info you need. For instance, if you have a regular stairs in dim3 (using just 1 map unit), then it'll look real for the size of models I was using.
You don't have to guess, you just need to get a feel for it. For instance, 10-12 map units makes a good vertical size for doors, and maybe 8-10 across.

you should add a customizable ruler to the animator where you can say "this object is 5 ft. tall" then save that height. i loose A LOT of time scaling a model and testing it over and over again. the maps are okay, but making a model the right size takes forever, especially when i decide to change the model and replace it, then i forget how much i scaled it and have to do it all over again which i am going to have to do for a third time since i accidentally got my uv mapping backwards so the words on the computer screen are backwards.

Look at the info window. It tells the total extent of the x/y/z. Let's say you have a guy that's x=700, z=700, y=2000. He's 2000 units tall. Let's say you make a new model. Import it. It turns out to be y=1000. Just go to Transform/Scale, and enlarge the Y by 200%.

A visual ruller would be helpful, especially for bones and Hitboxes. I made a quick mock-up of how it might look:
