I found a domain that's totally unclaimed by any provider; can I set up a dns server on my home computer?

No, domain names are centrally managed. They need to be registered with a central authority.

As far as I understand it, when you register a domain name, the domain name/IP pair is registered with some global watchdog. When a computer resolves a DNS address, it goes to the subnet, if the subnet doesn't know, it branches out until it can find out for sure if that domain name exists. I imagine that global watchdog is the last step in resolving the name. When the name comes back, it comes back the same way it went, and those DNS servers along the way that didn't have it can update their records to now contain it.

That's more or less an educated guess.

lol, there are about 100M registered domains, and 36^67-100M unregistered domains, doesn't mean those are free ;)
